In Takayama city (in Gifu prefecture), you can see historical buildings. Among those buildings, you will find this restaurant “Susaki”. It’s the oldest, best, and the most famous restaurant in Gifu. The beginnings of the restaurant were founded more than 220 years ago (1794) and the building is now registered as a tangible cultural property of Takayama City. And so you will have the opportunity to see the traditional Japanese architecture.
The restaurant’s attractiveness is not only in the building, but also in the food they make. Their specialty is “Honzen Ryori” which was established in Edo period. Honzen is originally from the Muromachi period with a special style and manner (it takes a whole day to complete!). However, the one Susaki offers is “Sowa-ryu” Honzen and has been passed through the generations until now. Of course their Honzen course was arranged to be completed within 2 to 3 hours.
The best restaurant of course has the best staff. Once you arrive at the restaurant they will serve you a cup of nice tea at the entrance lobby. After the manager’s greetings, you will be guided to your room. Even though you don’t know the manner, don’t worry. The professional waitress will explain everything to you. Also the serving time of each dish is perfect! All the customers that visit here are amazed with the perfection of their service.

***Please kindly note that top-notch restaurants charge a cancellation fee between $100 USD and $200 USD per person when guests make last minute cancellations as they would have given the limited seats to other customers if the seats were not allocated to you.
